1/2 lb of pea shoots, chopped
4 cloves garlic, sliced
2 tablespoons of oyster sauce (or substitute for soy sauce)
2 tablespoons of chicken or vegetable stock
1 teaspoon of cornstarch
3 tablespoons of avocado, vegetable, peanut, or canola oil
1) Combine oyster sauce, chicken or vegetable stock, and cornstarch in a small mixing bowl and set a side.
2) Heat a large wok or skillet over medium heat; add oil and swirl to coat. Add garlic slices and cook for 1 minute or until light golden brown.
3) Add the pea shoots, increase heat to high and stir. When the pea shoots are half way cooked, add the sauce mixture. (Make sure to stir the sauce mixture before pour into the wok, because the starch will sink down to the bottom) Stir well. Turn off heat after 2-3 minutes.
4) Transfer the pea shoots onto a serving plate. Enjoy!
