Orange and Avocado Salad with Microgreens

Ingredients

  • 1 orange, peeled and sliced crosswise
  • 1-2 Avocados, pitted, peeled, and sliced crosswise
  • 1/2 cup microgreens
  • 1 Tbsp fresh squeezed orange juice
  • 1 Tbsp extra virgin olive oil
  • Pinch sea salt

Directions

Sprinkle avocado slices with sea salt. Arrange avocado and orange slices in 2 stacks. In a small bowl, whisk together orange juice and olive oil. Drizzle with olive oil mixture and top with microgreens.
