1/2 cup kale microgreens
6-8 large mint leaves
1 mango, cut into chunks
1-inch piece of fresh ginger, grated or finely chopped
1/4 c lemon juice (juice from 1 lemon)
5-6 ice cubes
Optional: extra mint leaves for garnish, 1tsp honey for sweetness, 1tbsp chia seeds or flax seeds
Place all ingredients into a high-speed blender and blend until smooth, about 2 minutes.
Garnish with extra mint leaves (if desired).
