Corn Shoot and Daikon Salad


1/2 cup of chopped popcorn shoots

1 cup of chopped pea shoots

2 cups of daikon radish, peeled and julienne cut (you can also substitute the daikon radish with jicama or water chestnuts)

1/4 cup of sunflower seeds (optional)

1.5 tablespoons of rice vinegar

3 tablespoons of olive oil

1 tablespoon of lemon juice


Whisk the vinegar, olive oil, and lemon juice together. Season with salt and pepper.

Toss in the pea shoots, corn shoots, daikon, and sunflower seeds.
